Explosives create much heat too. When detonated in the open they often ignite fires.

They are used in well fires. The difference is well fires usually occur in a confined space and can be snuffed out by concussion and , as you wrote, getting rid of the oxygen.

I don't think the explosive used in well fires actually removes enough of the oxygen, likely a lot of thermite is added to those charges.
