I should have mentioned about some of the good things
I heard of olive oil. The incidence of heart disease
in people who use olive oil is less than in the general
population. Olive oil has monounsaturates in the ratio
73 parts to 8 parts of polyunsaturates. Better
monounsaturates than saturated fats. Better poly
than monounsaturates. That is for sure. Coconut oil
is the worst offender when it comes to saturated fats.
Saturated Monounsatu Polyunsaturated
Fat fat rated fat% fatty acid %
Butter 65 29 4
Lard 39 40 10
Tub Marg liquid safflower oil:
14 24 60
Corn oil 12 25 60
Soy Oil 15 25 60
Olive Oil 15 74 8
Safflower 10 10 75
Corn & Soy oils have comparable amounts of Poyunsat.
But Safflower has more of the poly.
When my wife and I travelled in Greece, we thoroughly
enjoyed greek food prepared with olive oil.
