Here it is. I got this recipe off the internet somewhere, but always tweak the recipes to suit my tastebuds. The most important thing is the cauliflower must not be too wet or the crust won't form properly.

CAULIFLOWER PIZZA

Break up a head of cauliflower (preferably fresh but frozen works, too) into florets and microwave in a covered dish until cooked (about 8 mins) -- do not overcook so it is mushy, you want it nice and firm. DO NOT ADD WATER. Carefully drain and allow to cool with lid removed, then rice the cauliflower -- if you do not have a ricer, you can grate it on a cheese grater, in a food processor, or with a knife. An alternative method (the one I prefer as it is easier to handle) is to rice the raw or frozen cauliflower first, then microwave it. Either way works so long as the finished product is properly drained of all liquid.

Mix in 1-2 eggs, 1+ Cup Mozzarella cheese and italian spices. Spread this 'dough' evenly out on a greased cookiesheet and brush lavishly with olive oil. Put in a 450 degree oven for about 15 mins. Remove and spread with your homemade sauce (I cook up a pot of tomato paste with Italian spices, garlic, onion, etc., whatever you like in your sauce). Top with more mozzarella and add cut up tomatoes, pepperoni, ham, olives, onions, peppers, mushrooms or whatever toppings you like. Pop it into the broiler until cheese is melted and toppings heated/softened. Voila! Pizza!

I've made this several times, and it is almost as good as the original, but no wheat! Very satisfying.
