And that's because Koreans were never slaves in this country, and have not experienced the level of discrimination that blacks and to a lesser extent Latinos have suffered.
Two generations ago, Koreans endured occupation and a brutal war. One generation ago, Koreans pretty much lived in 2nd world conditions and didn't even enjoy real democracy until the late 80's. Until then, Korea was ruled by a series of strongmen, with the last of them rising to power via a coup and holding onto power rather brutally.

Everyone has a sob story. You don't hear much about the Korean sob story anymore because they pretty much lifted their own asses out of poverty and the legacy of being the stepping stone of Asia. Now when you hear about Korea, you hear more about Korean BBQs, Starcraft, and Gangnam Style.

those who originate from Latin America prefer to be called Latinos; not Hispanics.
I like the term Latino better. However it isn't gender-neutral.
