As I'm sure you know, big Italian reds love to breath. They change dramatically with air. Some are much better being opened the day before serving. If i know I'm serving a Brunello with dinner, I will open it at breakfast at the latest. Depending on your circumstances, you may want to open 1 bottle the night before, one around noon and then do a tasting of the three bottles by opening the last as your guests arrive. It is interesting to taste the differences. Then again you may just want to open all 3 the night before.

I gave a Brunello to some friends who live a few minutes from Napa. They popped and poured a taste and thought it was "bloody awful". They left it on the counter and forgot about it until the next evening. They figured, lets give it another try. They were so amazed at how wonderful the wine tasted on the second day that they called me immediately to tell me the story and rave about the wine. I know I told my friend to open it the morning before serving but that advice went in one ear and out the other!

To answer your question, I see nothing wrong with the pairing!
