Which version of the OS and iTunes? And which iDevices ? Is it a laptop or iMac? Do you plug the devices into the computer to charge? That always starts iTunes. I find it very annoying when it does, because most times I just want a charge.

Do you have wifi sync on for each device?

You might try posing your question on the Apple Product Help thread. It likely has more followers given that it has been around longer.
