I now use maple syrup instead of agave...

I agree... maple syrup has a lower fructose content and contains an abundant complexity of trace minerals

When I do use small amounts of sugar in baking or cooking I always use Organic sugar

The other important ingredient is salt.

I only use sea salt that is naturally dried or mined… like Himalayan sea salt
