I grew up working in my dad's fast food & BBQ joints where the BBQ was legendary (still is, actually). There is nothing like taking a couple hundred lbs of pork butt off the pit at midnight and digging in while it is hot.

When I was in school I ran our BBQ place, which closed at 10. About midnight on weekends I'd have my friends over, we'd re-open the place for "invited guests" and feast on pork, brisket, ribs and fried shrimp. Health food. We had lots of great times after hours...
