Well John, It is likely that extremism is in the eye of the beholder. I for one, never add the entire packet of red pepper to my 5-alarm chili-indeed, I prefer 1-alarm. The important point is not that 5- alarm chili is bad but that Chef Prudhomme doesn't rush into my kitchen and make a big deal about the immorality or wrongness of my choice and insist that I either add the pepper or fail some culinary aptitude test.
Are you by any chance from Texas? we have some mighty potent jalepenos here.
