That's been done many times. I know of at least three TV news operations who systematically watched.
The vast majority of food stamp shoppers rode the bus, or came in a car with a relative or friend.
Often they stood outside waiting an hour or more for their bus to come back by. When the weather's hot ---> no ice cream for you, Junior...

The news consultant who told me about one of the studies wrote it off as a big waste of time because the station had to commit too many resources and it took too long, and they didn't get the 'scandalous' results they had
expected. How do you think such a study would be done? You can't identify people as food stamp shoppers when they enter the store. You have to watch the checkouts then have spotters watch them as they leave.
Any other method is either bullshit or made up.
