Why not have a rota to maintain the spreadsheet? I'd be happy to update it for a month.

Well, that's fine with me. I don't mind handing off the update duties to whomever wants to take them. We could say the person in control of the sheet can determine when trading is and is not allowed with the minimum being once per week.

I'll set up the new sheet, and when it's going I don't mind passing it along to someone who want to take it - that person can add additional trading days (in addition to Friday) as they like. So for the upcoming round there is only trading on Fridays until further notice - if someone else wants to enter daily trading into the sheet, that's fine with me.

The issue for me is that only one of my home PCs has an actual copy of Office, which I think is necessary to update the sheet. All the other PCs (which are more accessible) are running freeware (OpenOffice). So the machine with the real copy of Office isn't in the most accessible location, so updating the sheet is a bit of a pain.
