Carriers do all the grunt work while handset makers and software developers take all the money.
Once upon a time, the carriers were holding back the cell phone industry. They wouldn't carry a nice phone if they thought they couldn't make money on it which led to a bunch of crappy phones and features. The industry has improved immensely since Apple got involved. Are the carriers getting screwed somewhat? Sure, but who really cares. They screwed over everybody for years.
