In 1896, Arrhenius observed that Tyndall demonstrated that various gases retain heat. He also observed that we were putting those gases into the air. He formed the hypothesis that more will change temperatures. He then proceeded to form his theory.

Since then, but without the hypothesis cuz we already had that,... lots and lots of observations, on everything from 3D temperatures to physical changes to changes in plants and animal behavior. the observations continue.

Nope. A whole host of factors, none currently in play, can change the climate. For instance, the closing of the Isthmus of Panama led to permanent arctic sea ice. Could the decreasing icepack be caused by the reopening of the Isthmus which nobody noticed? Less than highly unlikely.
