I understand, with oysters - as with a few other true enjoyments in life - your first experience might well make an imprint on your - well, gastronomic - soul :) I first tried it out with my fine arts mentor, my uncle and brother of my mom at 19, couldn't quite decide back then if a go or no-go, but eventually went for oysters big way.

Oysters IMHO thus is a first experience make it or break it thing.

Once went to a business dinner in Paris, famed restaurant "Val d'Isere" - featured in a a famous movie by Truffaut ("Silk Skin"? A guy killed with a shot-gun against the back side wall). We just came back from a steak business dinner, on the way up in the elevator my boss asked me if tired, I said no, so 'let's have some oysters!'.
At above restaurant that was and after we had finished 48 belons 'B' each they run out of stock - and we finished our drinks and left.
