Rather than use fish as thermometers, modern science has actual temperature measuring devices.

The claims that various species are now living where none had gone before, might be just a matter of fish doing like people, who went to the moon, which is not actually warmer than it was before the Saturn rockets were invented. There isn't more oxygen there either. A better analogy might be Eskimoes who migrated from central Africa to igloos in polar bear territory. Oh, wait, did the polar bears migrate from somewhere else?

Do you have temperature records for where the John Dory used to live and where they now live? Or is this like measuring tree rings to determine temperatures 500 years ago? The tree ring circus went bung about where the Global Alarmist fraudsters decided to hide the decline and actual thermometers took over.

You probably know that fish and other living things expand their territories as best they can, adapting as they go.
