Many people can't be bothered. But they jump at the opportunity when it is made automatic and they don't have to carry physical cards with them. A data-connected watch could enable precisely this. I don't think you need the watch to be data enabled for this-- it would all happen on the terminal and cloud side. All the watch has to do is identify you as belonging to a particular Apple ID account, then the terminal communicates with Apple's servers who could pick the card to charge that matches the merchant class if you configure your account that way.
