The cards that offer 5% on specific categories would likely stop that feature - the idea is to get the customer used to carrying and using that card

Yes, it works too. I can't be bothered to carry more than one card, but I have swapped out which card I use for everything depending on promotions. This is certainly an arbitrage opportunity, but it's not sustainable. Unless you carry a balance, credit card companies don't have the margin to pay users back 5% on every transaction.
