Far less important than making it easy. I personally hate roll overs and animations. I want simple and effective. I think most people are like that. Whenever I hear people talking about their iPhone they talk about how its easy and just works. I cannot ever remember anyone saying they like it because the interface looks good.

Yup. Two problems there. Parents who don't understand usability concepts, and parents who might prefer emotional color schemes, roll overs and animations that make it harder on their kids.

One solution to that might be including Ishihara color blind testing images. Its likely that some of the boys probably have that problem too, with parents who are unaware they have the problem.

I would think strong colors would be OK for autistic kids. I'm pretty sure the book has a section on color blindness for the boys mostly so read up on that.

Read the section on shapes vs size and color for buttons. I'm guessing fun button shapes are going to be good for the kids.
