My sauerkraut is near done I guess but I will let it set out a while yet, probably put it in the fridge later this week.

My parents used to make sauerkraut when I was very young and I have a vague recollection of the crock and a stone and a stick stored in the cellar. I think the stone was put on top to weigh the cabbage down to keep it submerged in the brine and the stick was used to poke it as needed. My Mom also mentioned putting a cloth over top so it does not dry out. I tried putting the cloth over the jar and then put the tall glass filled with popcorn in to weigh down the cabbage but mostly what happened was the cloth wicked out the brine mixture and ended up with a big briny mess outside the jar. Consequently my sauerkraut is dryer than it should have otherwise been. Lessons learned and I hope that the sauerkraut still turns out OK.
