I just had a late night sauerkraut sampler after reading your post. I have just over a half gallon left. Yes I would do it again, but like any recipe I would change it just a bit. Putting the cloth inside the jar and having the moisture wick out and make a mess, I would avoid that mistake next time. Other than the mistake though it was OK. The recipe is rock simple, just the technique can be varied somewhat.
