I had layered my kraut with a couple of cabbage leaves, but had to remove them today because mold was developing. I replaced those with some cheesecloth right on top of the kraut, and then another layer at the mouth of the jar held on with a rubber band. It will be a week Sunday that I made it, so I have a ways to go. It's starting to look like Sauerkraut, but surprisingly, it doesn't have much of an odor.
