One of my co-workers actually got a crock pot for making sauerkraut delivered to the office today, he was getting it for his Mom for Christmas and if it works well he intends to get one for himself also.

I did my first batch from a half head of cabbage in a gallon jar and it worked out rather well. In fact for supper tonight we had perogies with onions and bratwurst sausage and I had some of my sauerkraut on the side, it was delicious.

My co-worker tells me that once the sauerkraut bacteria get started, the environment (crock pot or whatever) should be way too inhospitable for any mold to grow. I suppose the main thing is to get the sauerkraut properly started, and really the only consideration after that is for how long to let it go (how sour your prefer it to be) before declaring that the sauerkraut is ready.
