Gingerbread House Recipe

German honey spice cookies (for 5 small houses). But good as cookies also.

About 5 cups flour
1-1/2 tsp. cinnamon
1-1/2 tsp. ground cloves
1-1/2 tsp. ginger
2-1/4 cups sugar
4 large eggs (7/8 cup) slightly beaten
1/2 cup liquid honey

Sift flour, measure 5 cups into sifter.
Add spices and sift into large bowl. Add sugar.
Combine eggs and honey and add to dry ingredients.
Mix with hands until ingredients cling together in a ball.
Best to start with most of the flour and gradually knead in the remainder.

Turn dough onto tabletop and knead until smooth and workable.

Put into a bowl and cover with cloth or an inverted plate and let stand at room temperature a few hours or overnight so the honey can be completely absorbed by the flour.

On a slightly floured board, roll dough to 1/8" thickness. Cut four walls, etc. Bake 325F for 15 minutes.

The gingerbread is delicious AND very structurally sound, does not need to be very thick.

My Mom made this recipe when we were children and we assembled the gingerbread houses. We attached the pieces using molten sugar in a frying pan (being careful not to burn it). I still wear the scar on my finger from when my brother did not pay attention with molten sugar in a spoon while I held the pieces steady.....
