Questions 1&2: en.wikipedia.org I've always eaten the rind and am still kicking (actually could be good for you since it contains penicillin mold). I always let it warm up to at least room temperature and it can even be baked (search for recipes). The flavor is diminished if served cold (true for any cheese IMHO).
