Had the bed of an old fruit wagon that had been dumped years before. Used to shoot at that as a target. A second building we didn't shoot at, dynamite storage shed.

You could shoot at a contemporary dynamite storage building today. Today's dynamite is very very stable.
It takes a shock wave (i.e. blasting cap) to detonate it.

The old Nitro infused dynamite was and is very unstable. The reason you didn't shoot at dynamite back then is most dynamite still contained Nitroglycerine and poor packaging often leaked the nitro into the package or floor.

Nitro in free state is very unstable. One bullet or even a foot scrape could cause a detonation (and often did) in those circumstances.
