The key is "Green bananas". Green as in not ripe. A ripe banana is when the carbs (as fiber) have turned into carbs (as sugar).

Yeah, but, as you say they are still carbs. The carb and calorie counts are the same. I did the research when I first looked into resistant starch and was surprised, although I suppose I shouldn't have been.

Anyway, that does not speak to the apparently outlandish fiber claim.
