So, if everyone saved well over 60% by moving onto a dental insurance plan, who lost on the deal?

My understanding is that insurance companies don't sell products they lose money on. Dentists' fees, like the price of hamburgers, is set by free markets which determine how much money a dentist will make based on supply and demand.

So, the question is, if you and everyone else saves 60% by having a dental plan, where does that 60% come from? Thin air?

And unless you have an answer, I will declare my previous statement to have been correct that insurance is not about saving money but about managing risk.
