Fried Rice anyone? This recipe is a good start: allrecipes.com

I changed it a bit and added half an onion finely diced, half a green pepper diced together with mashed 2 cloves of garlic at the start - on medium heat then added the peas after a couple of minutes frying... careful not to get the pan too hot as burnt garlic is the pits...

Then I added cold cooked jasmine rice and fried that with the other ingredients for a bit. Added some ground black pepper, 2 raw eggs in the center and fried that and mixed it with the rice. A ladle of stock with some soy sauce and sesame seed oil added and cooked for a couple of minutes.... let cool and put in container in the fridge at least overnight to meld the flavors...

While cooking the onions and garlic can stink up the house if you don't have a hood (we do but dum-dum me forgot to turn on the fan) the result is pure heaven... either hot or cold.

And this is one of those dishes you can use up leftovers - let your imagination run wild.
