Wow you have no idea what your missing! I grill fish a couple times a week. I'd say there are two "tricks" to avoid a sticking problem. First is to coat the skin with vegetable or olive oil - I do this by putting oil in plate before setting the fillet on the plate for seasoning. The second and probably more important tip is don't try to move fish after you have set it on the grill until it's pretty much done cooking. It will "release" when the fillet is good and hot. For a salmon fillet on my grill that's about ten minutes. I then gently tip it over skin side up for another two minutes to add some additional heat and grill marks to the flesh side. And I've grilled fillets without skin using the same method and rarely lost any fish thru the grates. But usually I use a grill pan (it's a pan filled with holes) to grill fish fillets that have been skinned. Enjoy!
