This salmon talk takes me back to when I had 4 large salmon filets. Friend and I butchered a hog and got a cold smoker to smoke the bacon. Got an old bring recipe from way back. Brined the bacon and filets for 2 weeks and smoked them on and off for a month, never getting over 60 degrees.

Good bacon but the fish, great taste but don't eat too much at first. Laid one filet on the counter and covered it to keep the dust off. 3 months later that filet was as good as the day I caught that fish.
