What is the difference between Chinese and Mexican rice?
The commonality between Chinese and Mexican is, both are prepared ahead of time, and later cooked with additional ingredients for flavor profile.
I always had it in the back of my mind that is was like, kind of, sort of preserve laden not real rice.
Because I cook so much of it, I like to think I know a bit about rice. Uncle Bens Original is a good product; unlike the many crappy iterations of the brand you see on the shelf.

Most who do risottos, for example, use arborio instead of the real stuff. Carnaroli rice is the real stuff you'll need to make a risotto nice and creamy.

And so on with other rice varieties.
