I've been watching a lot of videos about how to reverse sear a steak. I tried with a couple of one-inch thick 1.25 lb T-bones in separate black iron skillets. Turned my electric oven down as low as it will go. (Oven thermometer reading cycles between 150F and 175F at this setting.)

Salted and peppered steaks. Stuck the skillets in the oven for an hour while steaks came to room temperature on the counter. Added a teaspoon of bacon grease to each skillet and rotated skillets to coat entire cooking surface. Let the oven come back to temperature.

Put one steak in each skillet. Oven thermometer reading was 175F. Flipped steaks after 30 min. Oven thermometer reading was 150F. Removed steaks 30 min later and let them rest for 30 min. Seared them in an iron skillet, about 1 and a half minute each side on medium high setting.

Turned out pretty good.
