I've been a fan of the Adelle Davis low and slow roast method of cooking since I learned about it 25 years ago. None of the videos I watched on reverse sear went as low as I did. Good video here of grilling a Porterhouse, but I don't think the chef let's the steak rest enough between the indirect cooking and the searing. Hope you have great results!
