Found this tip for how to manage your bookmarks in Edge: Click on the Hub (three lines at the top right of screen), a side bar appears and you will see the favorites star and three other items. Click on the star and your favorites will appear. From here you can organize by holding down the left mouse button and picking up the bookmark or folder you want to move. If you have folders, open the folder and then organize the bookmarks. To rename or remove, right click on the bookmark, to create a new folder, right click in the bookmark window, to create a new bookmark, click on the star adjacent to the address bar. There doesn't seem to be an obvious method of editing a bookmark instead of creating a new one.
