Hey, I'm down (emotionally, of course) but not out.

Went shopping at Kmart today as a distraction and found a Hamilton Beach Panini maker that was only $20. I have never used one before and have tasted panini sandwiches and liked them so I bought it.

Then I went out on Amazon and bought a few 99 cent Kindle panini cookbooks.

My first try was:

2 slices whole wheat bread
2 tablespoons mayo
1 tablespoon savory mustard
1 thick slice of tomato
2 slices of ham
1 thick slice of onion
olive oil

I first spread the bread with mayo - a tablespoon for each slice.

Then I put a half of the mustard on one slice and half on the other.

Next I put a slice of ham on each piece of bread.

Next put the slice of onion and tomato on once side and covered with the other.

Then I spread some olive oil (extra virgin) on the outside of each slice of bread.

4 minutes in the panini maker and wow! It was wonderful... I am going to be making a lot of those sandwiches for my meals - really handy and incredibly tastey. And stupid me, I had some cheese out to put on it but forgot to use it. Oh well, still have more ham etc.

Anyone else making panini sandwiches. Seems like they would go well for many occasions.
