As always it is correlation not causation. Because no one knows the what of anything nor the why. Why is irrelevant. How is barely discerned and when it comes to processes within the human body we are ignorant as children.
All I can do is repeat what I believe to be statistically and personally true. To tell people it is ok to gorge on fat is dangerous. A diet must be very carefully balanced. When I eat meat, and cholesterol containing foods, my blood pressure goes straight up. Stat number one. when I refrain from consuming animal protein and saturated fat, take pantethine, niacin, and blood thinners, my BP goes down.
Everybody's LDL is different. We know that cholesterol is there for a reason. But there are cholymicrons and there are cholymicrons. Hard, dense LDL is eventually going to catch up with you. Some people's HDL is very efficient. Some HDL is low and inefficient. Most of the causes appear to be genetic, but they are definitely exacerbated by diet. And there are salt responders and non salt responders. (BP wise that is.) But generally the less salt u get the better.
One function of cholesterol is to make vitamin D3. The cholesterol in the skin gets taken up to the surface and by UV rays made into the hormone D3. Hence the important health function of "harmful" UV rays. Skin block may cause cancer and HD.
It isn't just about cholesterol. IT is about OXIDIZED cholesterol. Why does it oxidize? Because it is cooked. I guarantee u if you con't cook your food, barring parasites and bacterial infection, your health will improve. Eskimos eat a lot of meat. Their name means eater of raw meat. But where did u see a lot of fuel in the frozen arctic. Ah hah.. I don't recommend uncooked meat, however.
Cholesterol made by the Liver has one advantage. It starts out life unoxidized. It cannot form plaque in that condition. However if it oxidizes due to lack of vitamin intake, then it could form plaque. The more anti oxidants in the diet, then, the less chance arterial plaque has to form. If u eat meat by the carload then u most also gorge on vegetable sterols and stanols in order to quell the fat uptake in the intestime. Loads of celery, Bok Coy, Yu Choy, Spinach, swiss chard, kale, broccoli and sterol pills.
Canadian wheat is very high in Selenium. For this reason Canadians suffer very few strokes. So wheat is not necessarily the number one enemy unless it is markedly out of balance in the diet.
