It may be wrong, but it's certainly not lunatic. Even the academically accepted purpose of them (solely as a tomb) is just a theory.

Take a step back and ask yourself why people (who needed to store grain because of famine) would spend 20 years building a 450 foot high structure to be used solely as a tomb... that frankly sounds more like lunacy than what Carson said.

And if no trace of grain has been found, wouldn't that be normal after 4,000 years? Maybe they became gluten free...
