| | | Excellent post, GZ. If anyone hasn't read the book by Michael Moss [1], Salt Sugar Fat: How the Food Giants Hooked Us, I strongly recommend it. It is an incredible analysis following years of research that included interviews with top food industry insiders who left the industry due to enormous guilt over the crimes that they were participating in. In a nutshell, the food industry spends enormous amounts of money to find the pleasure point of the taste buds, which involves some combination of highly processed salt, sugar and fat. They have zero concern over our nutrition -- they only care about profits!
The bottom line is that we consume far too much processed salt, sugar and fat. Our bodies are starving for real nutrition even after hundreds of calories of processed junk "food" are consumed in a sitting, so our brains still signaling us to eat more. It's a brutal cycle, similar to drug addiction. Most people are highly addicted to processed salts, sugars, and fats.
A simple litmus test to confirm one's addiction to processed salt and fat is to imagine eating a plain baked potato with NO added salt or butter. Pretty boring, right? No one craves that. Similarly, imagine a bowl of mashed potatoes without any salt or butter. Again, it's boring to most people and they don't crave it without the added salt and butter. Now, imagine salt-free potato chips. Bland and boring, right? The point is that people have been conditioned to crave processed salts, sugars, and fats. The food industry has the procedure down to a science -- literally.
The good news is that one can get all of our required sodium, natural sugars, and healthy fats by following a diet that is very rich in organic fruits, vegetables, nuts, legumes, fish, and occasionally very lean meat and poultry. Don't salt anything, but if you do, use an organic sea salt very sparingly.
