I had intended to roast a couple of Cornish game hens for Thanksgiving. But Thursday morning I Remembered this Al Roker recipe for roasted chicken.

So I prepped them Thursday, spatchcocked them because I hadn't spatchcocked any bird before. Just wanted to try. Cooked them today. Really tasty, maybe a little salty. (Read Al's recipe; don't go by the video.)

I have a pressure cooker that I've used a couple of times. I remember my Mom used a pressure cooker to cook pintos. Sometimes she would forego the pressure cooker and just cook the pintos in a pot covered with a plate. Took two or three hours. Today I soak pintos overnight (as my Mom did), bring them to a boil, and simmer for 30 minutes, and they're done. Maybe I'm using fresher beans.

Generally, I like low and slow for cooking meats. Big Adelle Davis fan.
