When you are making soup for the needy, infirm etc, you are faced with a plerplexing array of soups on the web. For my recent bout of soupmaking, I made a minestrone (twice) of about a gallon each and a gallon of chicken soup. Feed-back is the minestrone is delicious and just delivered chicken soup so no feedback yet. What I have learned:

- when you are going to the trouble to make soup from "scratch," it is probably better use a more complex soup like minestrone which is hard to mess up then a simple one like chicken soup. When you go to all the trouble to make a soup from scratch, the extra work for the more complex soup is more than worth it and it may only involve adding a can (did I say scratch) of kale and/or a can of lima beans toward the end of the cooking. They freeze well so do make double or more of the recipe and put the leftovers in pint plastic containers and freeze them.

- a little heat never hurts but keep it down to a dull roar as the recipients may have a sensitive palate. I add a can of tomatoes with green chilies to provide the heat.

- adjust the liquid to suit the soup/stew. I use stock to thin such soups as chicken soup and unless the minestrone is really thick, tend not to add any liquids to it except as mentioned in whatever recipe you are using.

I hope some of the folks reading this will contact their local homeless shelter to see what they can do to help the needy. I cook for local churches upon request and provide bread pudding each Tuesday to our St. Lukes food pantry for those picking up food they need for the week. Note that the bread pudding is usually eaten at the church rather than taken home.
