Nearly 20 years on SI and I had no idea this forum existed ... I still wouldn’t know if it wasn’t for TJoH mentioning the Prime Rib recipe on his SI hangout. Thanks!

Huebl ... German, Austrian or Swiss background? I’m guessing Bavarian. How close am I?

Not sure how “usefull” I will be to this forum as cooking by recipe isn’t something I do. I view recipes as something you don’t follow but take ideas from.

BTW, in a previous life I was trained as a Chef in Germany, spent a few years in the hospitality industry which btw brought me to Canada and got out of the industry while the getting out was good.

And since I’m already here, how about a “slightly off the wall” poor man’s dish ... Krautfleckerl ... Everybody likes pasta and cabbage is in season; at least in my neck of the woods.

Serves 4 (give or take) – Quantities are approximations

1 lb green cabbage. Cabbage wedges, sliced in more or less thin strips (Julienne), microwave in a covered dish with a little water for approx 10-12 minutes (al dente). Drain cabbage. The drier it is, the less mess on your stove.

Roast cabbage in frying pan (high heat) in plenty of vegetable oil. Don’t overload pan. Roast in smallish portions to allow for equal (golden) browning.

Season with salt, ground pepper, sweet Hungarian Paprika and a good dose of sugar.

Add canned diced tomatoes including liquid – Cabbage tomato ratio about 4 to 1. Continue on high heat for a few minutes until the liquid is all but gone.

Boil 1lb broad egg noodles (al dente). Use a good quality noodle. Drain well and mix with roasted cabbage. Place in warm oven for a few minutes to allow the noodles to absorb the flavours.

We serve it with pickles on the side but that’s optional. Lettuce in a basic oil and vinegar dressing works too.
