Very informative post. Thanks. I'm not now as panicked about irradiation as I once was. Your post adds supporting arguments in favor of irradiation. I don't know if that was your intention, but it left me with a more favorable impression of the process.

On a similar note, read the following post on the Yahoo thread on OZON:

The poster gives a positive spin on irradiation and says the following on ozone:

"Ozone, on the other hand, is a highly reactive molecule by virtue of free-radicals. It will react with DNA, protein, and just about anything else. In my mind ozone is useless for sterilizing meat, but may be useful for the surfaces of fruits and vegetables where ethylene oxide had been used."

So, why not use both processes, irradiation for meats and ozone for fruits and vegetables? I welcome your thoughts.
