Agreed, Blue, I definitely lean into the spicier varieties, but also make sure to offer and milder version for the uninitiated in our gatherings, and/or for younger kids who haven't been acclimated to it yet... I also try to layer the heat in at least one so that there's an initial blast with some middle mouth carry through and back mouth savory heat and can build in intensity by the time you start to see the bottom of the bowl... I've also had lots of fans of two Mexican varieties that use dark chocolate, though while it has an interesting effect there isn't any chocolate taste/flavor -- something else...
