True but you could disable fingerprint recognition (and the associated payment mechanism) without bricking the phone.

Also if you are going to brick the phone you could have it apply only to new phones released after the OS upgrade that adds that "feature", or you could announce what will happen so that people who have already had their phone worked on by non-Apple personnel will know not to upgrade the OS.
