If you merely (but totally) disabled the fingerprint scan hardware (and thus indirectly the ability to use the Apple for payment) you would meet the specific security need Apple was addressing without bricking the phone.

By some definitions of "brick" they didn't brick the phone since function was restored later, not totally and irrevocably destroyed. That fact mitigates my concern for Apples' initial actions here.
