'Emphasis on fresh food' - this applies to rural and small-town Mexico as well, people tend to eat very fresh food grown quite close to where they live ... very little that is processed to any degree, and not only because it's far more expensive, also because it's clearly been through factory processes that heat and beat the original nutrition out of it ... all the matriarch chief cooks we know down south are quite distrustful of any processing they don't personally control, tend to want food as direct and as fresh as possible ... example - father in law is a fisherman, lands catch about an hour after dawn, there is never any fish left over past two in the afternoon
