Re perennial arugula, I find the flavour is quite variable. I use it in sandwiches, and in salads, maybe one part to five part lettuce.

Because of the way my garden is laid out, it often seeds itself in my tomato pots while I am not looking. This may not apply in more temperate climates, but I keep some going in the pots because it is ready to eat a month or so earlier than the stuff growing in a garden bed.
