The fact that residents of China will eat any animal which moves, including dogs and cats is not a value-laden comment. As I'm sure you find donkey and dog wrapped in gold-leaf with cat liver sauce absolutely scrumptious. A feast fit for any princeling I'm sure, but different from my tastes.

As they say in Russia "lyudi ne sporyat o vkusakh" - “people don’t argue about tastes”. They say that because they've had a long history of dealings with China.

North Koreans even have a cookbook explaining how to serve up various types of grass, weeds and insects. Clearly a very sophisticated culture China could learn from.

Just keep in mind the advice from the North Korean government that dogs have to be beaten to death to obtain the best flavor. They say only a barbarian will eat an unbeaten dog.
