Briefly, it is just one way that packets can be formatted for transfer from one computer to another over a network. It is an alternative to TCP (Transmission Control Protocol). I believe that UDP does some self checking while TCP depends upon higher levels to check for correct data.
I would dig out my network class manual, but it's at my office and I'm home.
