Pancake report....

I used 2 eggs and 2 bananas and this amount made five cakes. I melted some butter in the bottom of a frying pan, and added 1/3 C of batter for each cake. They browned nicely and each took approx 3 minutes to cook. I ate two and hubby ate three.

These pancakes are very tasty. Hubby really liked them, and was a bit surprised at how sweet they were, but I have to say they're what I expected. Moist, slightly sweet with a very good pancake like texture. They were just fine the way they came off of the griddle, and we didn't feel like we needed to add syrup or more butter. I think they'd be good with a fruit compote, but I don't want to add any more carbs. The bacon was a nice addition and we're both feeling quite satisfied. We're glad to have an alternative to traditional pancakes and will be making them for breakfast at least once a week.
